Chocolate Vegan Cupcakes Recipe

INGREDIENTS

* 1 cup soy milk
* 1 teaspoon apple cider vinegar
* 3/4 cup granulated sugar
* 1/3 cup canola oil
* 1 teaspoon vanilla extract
* 1/2 teaspoon almond extract, chocolate extract, or more vanilla extract
* 1 cup all-purpose flour
* 1/3 cup cocoa powder, Dutch-processed or regular
* 3/4 teaspoon baking soda
* 1/2 teaspoon baking powder
* 1/4 teaspoon salt

INSTRUCTIONS

1. Preheat oven to 350°F and line a muffin pan with paper or foil liners.

2. Whisk together the soy milk and vinegar in a large bowl, and set aside for a few minutes to curdle. Add the sugar, oil, vanilla extract, and other extract, if using, to the soy milk mixture and beat until foamy. In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Add in two batches to wet ingredients and beat until no large lumps remain (a few tiny lumps are OK).

3. Pour into liners, filling 3/4 of the way. Bake 18 to 20 minutes, until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and let cool completely.

Variation:Cookies ‘n’ Cream Cupcakes (pictured): Mix into cupcake batter 1 cup (about 10 cookies; chop first, then measure) of coarsely chopped vegan chocolate cream-filled sandwich cookies, like Newman-O’s. Bake as directed.

Buttercream Frosting:
INGREDIENTS

* 1/2 cup nonhydrogenated shortening
* 1/2 cup nonhydrogenated margarine, we use Earth Balance
* 3 1/2 cups powdered sugar, sifted if clumpy
* 1 1/2 teaspoons vanilla extract
* 1/4 cup plain soy milk or soy creamer

INSTRUCTIONS

1. Beat the shortening and margarine together until well combined and fluffy. Add the sugar and beat for about 3 more minutes.
2. Add the vanilla and soy milk, and beat for another 5 to 7 minutes until fluffy.

My car caught on fire Tuesday. I got out as soon as the gas pedal stopped working and smoke came through the hood. I watched it burn in flames. The bridge patrol officer driving behind me said he saw an explosion and something fly out from underneath. I wish I had my video camera with me. I'm going to the junk yard tomorrow to get the plate off the back (the one that didn't burn) and hand it into the DMV. Maybe I can document the remains. I'm getting a kitten tonight. He's 9 weeks, black and white. I'm going to name him Food Stamp. Stamp for short. One of my best friends is getting married tomorrow. Sheri and I introduced her and her man. I love those kids. It's the first wedding I've ever been to. My friend Danny was in Egypt for the past year, met a wonderful Egyptian man and they are having a baby. She is home now with her folks in Massachusetts and leaves again for Egypt in August. I look forward to a long visit with her new family on their farm in Egypt next year. She tells me I'm going to fall in love with the textiles there. I'm so happy for her. Tina is coming over right now. I'm helping her make a t-shirt for her dog with our work logo on it. Gracie's is doing a three mile walk at Colt State Park for The March of Dimes tomorrow. Maybe I will start a dog clothing line for my label :). I want to go see Odd Future in Boston next month, but I really don't want to go to the show. I just want to chill with them. I noticed Vice and Terry Richardson grabbed them for a photo shoot. Looked like fun.
I started ironing my dollar bills and I'm dancing at Perishable theatre May 9th. You probably don't want to miss it. I'm really excited about it all right now!

Rachel Fae Coleman, a military child from the States as well as our old apprentice, has proven that she's one step ahead of us in life. You see, she made her first book Stream of Thought. Maybe it's food for Freud pupils and other psychoanalyzers, but it was her dad who inspired her. In the old days he always brought presents with him when he got home. Under the influence of pieces of coral reefs, kimonos or stories about bullfights, Rachel developed a fascination for everything our planet is sprinkled with. Her thoughts were gathered in Stream of Thought, a book which is situated in the south of New England en the north of Belgium. Rachel floated between both places and lived cheerful in her own created world. A world in which televisions can start a dialog with the viewer, where eyeballs get put out and the flipped out street artist Lefton Pinkhand gets a lead part. The book isn't anything like the movie Fear and loathing in Las Vegas, but the collection of projects she uses to look at herself are sometimes just as strange. She takes snapshots of a flabbergasting world which surrounds and intrigues her. One thing's for sure: despite her own weird lifestyle she became friends with the nicest people in the world, the Belgians. Finishing tip: We should all take an example of Rachel en eat some more cereal.

Started a Vinyasa yoga class downtown. Vinyasa yoga is one of the most commonly practised styles in the West. Sometimes referred to as "flow" yoga, the classes usually focus on breathing and movement which is almost dance-like.

My mother gave me the idea to start crocheting with other materials besides yarn. This is a start. Sure, it's probably been done before. I'm putting together skeins from fabric scraps and crocheting really long lightweight scarves with them, to wrap and wrap around the neck. Perfect for springtime!

Italy is said to have 20 wine regions which correspond to the political regions.

DOC: Vino a Denominazione di Origine Controllata.
Translated as regulated place-name
DOC wines are produced in specific well-defined regions, according to specific rules designed to preserve the traditional wine-making practices of the individual regions.
The winery can state the vineyard that the grapes came from, but cannot name the wine after a grape type (doing so would cause confusion, because there are some DOCs named after grape types. Since a wine has to meet certain standards to qualify as DOC, the quality of Italian wines as a whole has improved since the first DOCs were established in the 1960s.

DOCG: Vino a Denominazione di Origine Controllata e Garantita
translated as regulated and guaranteed place-name.
Similar to the DOC but more stringent. Allowable yields are generally lower, and DOCG wines must pass an evaluation of a tasting committee before they can be bottled. The establishment of DOCG wines has again resulted in an overall improvement in the quality of Italian wines. The only drawback is that in some cases the areas are too large (all of Chianti, about half of Tuscany, is DOCG for example, despite fluctuations in quality from place to place.)

It is the grape of most of central Italy from Romagna down to Lazio, Campania and Sicily. Outside Italy it is most famous as the main component of the blend Chianti, Carmignano, Vino Nobile di Montepulciano and Morellino di Scansano. Young Sangiovese has fresh fruity flavours of strawberry and a little spiciness, but it readily takes on oaky, even tarry, flavors when aged in barrels. Sangiovese was already well known by the 16th century.

Sangiovese grapes make wines that are medium to high in acidity and firm in tannin; the wines can be light-bodied to full-bodied, depending on exactly where the grapes grow and how the wine is made. The aromas and flavors of the wines are fruit-especially cherry, often tart cherry-with floral nuances of violets and sometimes a slightly nutty character.

2. Aglianico
Originally brought to Italy by the Greeks in the 6th century B.C., Aglianico was famous in the ancient world for it's part in Falernum, a wine revered by kings and poets. Today it is making a comeback after nearly being wiped out by Phylloxera in the 19th century. A late ripening varietal, Aglianico boasts inky-black depths of color, fiery tannins and a firm structure. Aromas and flavors of black fruits, smoke, dark chocolate and even iron are common. Young Aglianicos have a tendency to be harsh and bold, but new world wine-making has made the better examples more approachable at an early age. Aglianico is a long lived varietal, with better examples improving in bottle for decades.

Aglianico is southern Italy's greatest grape, with the best expressions coming from the D.O.Cs Taurasi in Campania and Aglianico del Vulture in Basilicata, where it grows in the volcanic ash on the slopes of Mount Vulture. It can also be found in the warm climates of Riverland (South Australia) and Nemea (Eastern Greece). It is a good match for roasts and game.

3. Nebbiolo

Scattered in Northwestern Italy- mainly the Piedmont region-Nebbiolo just doesn't make remarkable wine. But the extraordinary quality of Barolo and Barbaresco, two Piedmont wines, prove what greatness it can achieve under the right conditions.

The Nebbiolo grape is both high in tannin and acid, which can make a wine tough, Fortunately it also gives enough alcohol to soften the package. Its color can be deep when the wine is young but can develop orangey tinges within a few years. Its complex aroma is fruity (strawberry, cherry), earthy and woodsy (tar, truffles), herbal, mint, eucalyptus, anise and floral roses.

Lighter versions of Nebbiolo are meant to be drunk young-wines labeled Nebbiolo d'Alba, Roero, or Nebbiolo del Laghe, for example-while Barolo and Barbaresco are wines that really deserve a minimum of eight years' age before drinking.

Faerie : from the Latin term for "fate" (fata), faeries (or fairies) are a "host of supernatural beings and spirits who occupy a limbo between earth and heaven" (Guiley). This is in recognition of the skill faeries had in predicting and even controlling human destiny. Faeries could be either good or evil creatures, and at various points in history have been confused with witches and demons

Fay or fey is the archaic term for faerie meaning bewitched or enchanted. This word derives from 'Fays' meaning Fates, and thought to be a broken form of Fatae. 'Fay-erie' was first a state of enchantment or glamour, and was only later used for the fays who wielded those powers of illusion. The state of enchantment is fayerie, which became fairy and faerie.

Finished a crocheted purse today. Added lining, tassels and a strap. Actually quite pleased as I've spent years getting my craft to a marketable level!
This is the first of a collection I hope to have on consignment by January, the latest.
